Tasting Notes
A smooth, full-bodied cup with a rich umami depth and minimal bitterness. Its deep steaming unlocks a vivid, emerald liquor and a creamy mouthfeel, offering a well-rounded and satisfying experience.
 

Production Details

  • Steaming: Deep (Fukamushi style)

  • Roasting: Medium roast to highlight body and sweetness

  • Pesticides: Not used for over 30 years

  • Fertilizer: Organic fertilizer and wild grass compost


Brewing Suggestions

  • Water Temperature: 80°C

  • Leaf Amount: 5g per 200ml

  • Steeping Time: 30 seconds (first infusion), 10 seconds (second infusion)



Message from the Tea Master
Sencha Fukamushi originates from my hometown of Makinohara, where this deep-steaming technique was first developed. Unlike lightly steamed teas that emphasize the raw expression of the leaves, deep steaming softens bitterness and enhances richness—resulting in a mellow, rounded sweetness.

If Asamushi (lightly steamed tea) is like Japanese cuisine that lets the ingredients speak for themselves, then Fukamushi is more like French cuisine: carefully prepared, layered, and deeply satisfying.
