Tasting Notes

This Kabusecha offers a refined sweetness with a clean, natural finish. Its delicate umami is balanced by bright green freshness and a subtle astringency that enhances clarity and depth. The shading process adds a soft roundness, while preserving a refreshing purity in each sip.
 

Production Details

  • Steaming: Light (Asamushi style)

  • Roasting: Very light, to maintain the tea’s crisp, clean profile

  • Pesticides: Not used for over 30 years

  • Fertilizer: Organic fertilizer only
     

Brewing Suggestions

  • Water Temperature: 70°C

  • Tea Leaf Amount: 5g per 200ml

  • Steeping Time: 60 seconds for the first infusion, 30 seconds for later infusions

I’ve never been fond of Kabusecha that focuses solely on strong umami. With this tea, I set out to explore a more natural, nuanced expression of flavor. It’s a journey guided by both human passion and the untamed potential of tea plants and land. Somewhere between intention and nature lies the balance I continue to seek.
